Cooking Panzanella a la Tuscan with gambas

Before you prepare this mouth-watering dish made out of prawn, you have to know about two types of prawn that are distinguished in Spain. Langostinos are the largest ones which are also called king or tiger prawns by the people of UK. Where as Gambas comprises of smaller ones which may be of different size. This are compared to prawns of Atlantic and people find this to be tastier than the giant ones. People of Spain love to have hot grilled shrimps which they have at counter of different bar. Along with it they sip chilled beer or Fino sherry served chilled. Panzanella is a bread salad of Tuscan summer. This preparation is made with slate bread. It is a very popular course in LA Baracchina of Ciattini which is at Florence. This preparation became very famous after the war, when people could some ingredients along with bread and make it a rich dish. Here just tomatoes, onions and cucumbers are not just used. One uses other raw vegetables, different herb, vinaigrette which is tossed with small bread chunks to make it. You can also add kidney beans or chickpeas to it to make it a complete meal. |

- 24 gambas, 0.27 lbs. each
- 1 lemon
- 0.66 lbs. hacked celery, carrots and onion
- 2 laurel leafs
- 1.1 lbs. hardened bread
- 0.44 lbs. tomatoes, for the salad
- 0.33 lbs. cucumbers
- 1 oz. hacked onions
- 0.21 cups cold-pressed pure olive oil
- 0.42 cups vinegar
- 12 fresh basil leafs, cut en julienne, meaning, into long thin lines
- Salt
1- Take a cooker and add 13 cups of water in it. 2- Add celery, onion, carrot, pressed lemon and laurel and cook it for 15 – 20 minutes with open lid. 3- Clean about 24 gambas removing its tail and head. Also remove its outer shell 4- when the vegetables get half cooked, add 24 gambas in it and cook again for 10 more minutes. 5- Before preparing salad, macerate some slices of stale bread. Cut this bread slice in small pieces and soak them in some water for about 2 hour. You also have to pour few drops of vinegar to this bread soaked water. 6- Diced tomatoes finely chop some onions and roughly chop basil leaves. 7- Place all these vegetables in a terrine dish and sprinkle some salt in it. 8- Drain bread well removing excess water from it. 9- Place it on the chopped vegetables and season it well with salt, pepper and some drops of olive oil in it. You can also add few drops of vinegar and let it to rest for an hour. 10- Now take another dish and put 2 spoons full of panzanella and 4 spoons full of gambas on it. Now season it with freshly grounded pepper and salt. Beautifully garnish it slices of tomatoes and basil leaves and pour few drop of olive oil over it and serve it. A Good Summer Food
This recipe is very popular during summer especially in Spain. This version of Panzanella doesn't taste far from the other Panzanella recipes. I admit this is a mouth-watering dish especially when it's summer already.
